Profile

Dr. Zaukuu is a Research Scientist focusing on the application of advanced instruments for modeling Food and Pharmaceutical quality parameters. He had his primary and tertiary education in Ghana under the Ghana Cocobod Scholarship before pursing his BSc. in BioAnalysis and Quality in Morocco under the government of Ghana Bilateral scholarship. He primarily focused on method validations for the determination of histamine in fish using spectrofluorimetric and chromatographic techniques at the Office National de Securité et Sanitaire (ONSSA), Casablanca, Morocco. 

In 2017, Dr. Zaukuu won the Stipendium Hungaricum Scholarship to pursue is PhD in Food Science at the Hungarian University of Agriculture and Life Sciences (MATE) where, he graduated with a Summa Cum Laude (100% grade). His doctoral study focused on the the “Application of Electronic Tongue and Near Infrared Spectroscopy to Detect Adulteration of Some Foods with High Economic Value”. He was also a board member for the student chapter of the Institute of Food Technologists (IFT) and a local organizing committee member for the  1st international Conference for Ghanaian students in Hungary (6th March 2019) and also, the 2nd European Aquaphotomics conference in Budapest (December, 2019). He was a facilitator for the Erasmus Mobility Grant between Department of Food Science and Technology, Kwame Nkrumah University of Science and Technology (KNUST) and the Department of Measurement and Process control, MATE-Hungary. 

Currently, Dr. Zaukuu has over 32 peer reviewed journal publications, two co-authored book chapters and has participated in over 31 scientific conferences in difference countries across Africa, Europe and Asia. He has peer-reviewed over 40 manuscripts for more than 15 impact journals and is a guest editor for the processes special issue “Applications of Molecular Spectroscopy in Agri-Food Science and Manufacturing Processes”). Dr. Zaukuu is a member of the Project Management Institute, International Society of Aquaphotomics, the Agriculture, Nutrition and Health Academy and the Agriculture-Nutrition Community of practice.
