Leonard Delali Kodjo De-Souza is a Lecturer at the Department of Food Science and Technology. He obtained Diplom Ingenieur (Dipl.-Ing.), (Certified Engineer) in Food and Fermentation Technology from Voronezh State Technological Academy in the Russian Federation (1997-2004).
L.D.K. De-Souza returned to Ghana in July 2004 and did his National Service with the Food and Drugs Board in 2004/2005 National Service year. After the national service, he travelled to the United Kingdom and returned in 2006 to work with the United Nations Industrial Development Organization as a Project Assistant on the UNIDO Sorghum Malt Project located at CSIR Food Research Institute, Accra. After the completion of the Sorghum Malt Project in 2008, he took a contract job with the Food and Drugs Board as an Assistant Regulatory Officer and in 2010 had a scholarship for a PhD in Food Science and Technology at Voronezh State University of Engineering Technologies, Russia (2010-2014). The title of his PhD Dissertation is “Perfection of the technology of hydrothermal processing of vacuum-packed food based on groats, vegetables and poultry".
L.D.K. De-Souza has 16 (sixteen) academic publications in print and he is one of the authors of 2 (two) patents.
His research interest includes but not limited to Food Processing, Functional and Specialty Foods, Fermentation Production (Baking, Brewing etc.), Food Plant Design and Food Packaging etc.
He likes Cycling, Gardening, Football, Reading Personal, Professional & Spiritual Development materials.
L.D.K. De-Souza is married to Mrs. Rosemary Odarley De-Souza and they have 3 (three) children (Valena, Daniel and Raphael).
